I Tried It and I Liked It:Cauliflower Tots

I saw this recipe on Pinterest and it gave me the idea to make my own version.

We eat a lot of vegetables and I find it's hard to mix it up enough so that we don't get bored. Cauliflower is not a favorite in this house. Ben and the boys don't like it at all. I could take it or leave it. The taste is just meh to me and I feel like it's just so messy to cook with.

I've used riced cauliflower in various casseroles and that went over surprisingly well, but I haven't been brave enough to try anything such as cauliflower pizza crust or cauliflower tots. I was afraid that was asking to much of the humble vegetable and I HATE wasting time and money on recipes that go to waste.

Well, desperate times call for desperate measures, I guess. We started back on the full GAPS diet a week and a half ago. Spring allergies came roaring in like a lion and both boys reported breathing difficulties. So back to GAPS it is. For now.

Thus the cauliflower tots.

I threw 1 bag of cauliflower florets (from Trader Joe's) into our Blendtec, added salt, garlic salt, fresh chives, and 1/2 cup grated goat cheddar, and two eggs and blended it all up.

Next, I used my small Pampered Chef scoop and plopped 12 helpings onto my cookie sheet. I baked them for about 20 minutes until they were golden brown and that was it. Ready to go.

They were surprisingly good! I thought they were excellent, and Ben and the boys each ate several without complaint. Good enough!

They weren't quite crispy, but they held together very well and we baked to perfection. Next time I may add a bit more cheese and see where that gets me. It may actually end up being snack-worthy!

  1. Cool! I've done the pizza crust before. I don't know if I didn't precook the cauliflower enough in the microwave stage or something, but it tasted a lot like cauliflower (shocker). I was not a fan.
