I Tried it and I Liked it: Dairy-Free Mint Chip Ice Cream

When you transition to eating healthy, there are some things that just get left behind. Especially if your reason for giving something up is because it is because of an allergy or sensitivity or somehow otherwise directly causes you health problems. There's no way to "treat yo-self" so the best you can do is find a substitute.

My favorite food of all time is mint-chip ice cream. I don't know why. It just is. It's the ice cream I used to get 9 times out of 10 when I used to get ice cream. Ah, the good old days.

Anywho, I've had some non-dairy mint chip ice creams here and there and they've been fine. Just...fine. Nothing exciting. One of the things that I found myself missing, oddly enough, was the green color. Which is silly, I know. Especially since I do not want to be ingesting artificial coloring. But still. It just wasn't the same.

Then I stumbled upon this recipe and about died. The pictures are amazing. Wow. Could it be true? Could a healthy ice cream really look that good? Could it taste as good as it looked?

I pinned the recipe and it just sat there. I have had all the ingredients for months now, but just couldn't bring myself to try it.

Until last night.

One of the coldest nights of the year, but that's neither here nor there.

I pulled out the ice cream maker and had it all mixed up and churning in no time flat.

I took a bit of a risk and used one can of coconut milk and 1 cup of goat's milk and upped the other ingredients a bit so there would be enough ice cream for all of us. It turned out to be a good combo! It was a total hit!

The only complaint is the "chocolate chips." Yuck. I'm just not a fan of coconut oil based chocolate. I chopped up some leftover Christmas candy - dark chocolate honey mints from Trader Joes - and used those instead. Next time I'll chop up a super dark chocolate bar.

Anyway, this ice cream whipped up quickly and easily, the baby spinach achieved that perfectly green look I was hoping for, and the taste and texture were perfect! We'll for sure be making this again!

(If using an ice cream maker, be sure to add in the chocolate chips/slivers after the ice cream maker is done. Otherwise they are hard on the machine.)
