Chili Popover Casserole

I liked this recipe so much I decided to give it it's own post.

It's started with the Pizza Popover Casserole recipe from Feeding My Kid. As I started to pull everything out to make this for dinner one night, I realized that we'd already had a pizza-fied meal the night before. We like pizza and all, but two nights in a row is a bit much. I wracked my brain and decided that I could easily modify it to have more of a Southwest flavor.

I seasoned the ground beef accordingly and tossed in a small jar of tomato paste instead of pizza sauce. I also added in a bunch of shredded cabbage just to bulk it up and add more veggies. Yes, that sounds weird, but it really was good. I find that cooked cabbage doesn't have that much of a taste and can often work well in a variety of dishes. It's a cruciferous veggie and its CHEAP!

I used the Namaste Gluten Free Perfect Flour Blend for the crust (with seasoning mixed in) and voila!

Everyone seemed to enjoy it and it made for great leftovers. Next time, I'm going to try this with a gluten-free cornbread top!
