I Tried it and I Liked it: Bacon Jam

I realize that the words "bacon jam" may make some people think of bacon-flavored jelly. This is so much better. This is our second year making this recipe and I forsee us continuing the tradition for many years to come. So good.



I won't say this is a super cheap gift, but it's fairly cheap considering how much it will be loved. I usually double the recipe and have enough to fill three small jelly jars. One to keep, two to give away.

It's good on everything; eggs, sandwiches, meatloaf, chicken, on and on. So sweet and savory and with just a little bit of tang.

Oh, about the tang: the recipe calls for half a cup of vinegar. That sounds pretty scary to me so I only add two tablespoons. If anyone is brave enough to try the full amount, please let me know how it goes!

One more note about the recipe: last year I didn't use any brown sugar and instead used honey to taste (along with the maple syrup). It was really good, too. Since gifts were the main focus this year I stuck with the recipe. Next time I make it for us I'll stick with the honey. I'm under no illusion this is healthy, but I do what I can!
