Pork and Sweet Potatoes

Sweet potatoes have been a welcome addition to our diet here lately. I can't tell you how bored I've been with GAPS-only foods. Snore.

Last night I made pork topped with slices of Fuji apples. Then I mixed diced Fuji apples and sweet potatoes. Dusted them with cinnamon, and drizzled honey and maple syrup on top. Threw it all in the oven at 350. While it was baking, I reduced down a bunch of broth to uses as a gravy. Just prior to serving I ladled the gravy on top and then added a dollop of peach jam that we purchased from the Amish store forever ago and couldn't enjoy. So not GAPS-friendly, but...oh well!!

Easy, yummy dinner.
