I Tried it and I Liked it: Fermented Applesauce

I'm constantly amazed at the foods that can be successfully fermented. When a friend posted that she had fermented applesauce I was thrilled! Both boys love applesauce and I'm always looking for more ways to get fermented foods into their little bodies. What makes this really great is that you can just use jarred applesauce. I'm always looking for shortcuts on GAPS! Trader Joe's has organic, unsweetened applesauce for a great price.

Easy Cultured Applesauce

1 jar of organic applesauce
4 tbsp whey or 4 tbsp water kefir
2 tsp cinnamon
1/2 tsp cloves

Pour applesauce into a big enough glass jar so that added ingredients will fit. Mix all ingredients well and cover with a tight fitting lid. Let sit at room temperature for 3 days. Store in refrigerator.

I've made two batches now and we've all really enjoyed it. I used milk kefir whey and thought it tasted just fine. As much as I love the jarred stuff, I'm thinking of trying to ferment some raw applesauce every now and then. I'll be sure to post if/when I do!
