GAPS Diet Valentine's Day Desserts

We had breakfast for dinner on Valentine's Day. I've already posted the recipe for butternut squash pancakes and I've talked in the past about how fun bacon hearts are.

I wanted to do a different dessert from what we usually do (peanut butter brownies) so I browsed the internet and came up with this ice cream. I didn't have cherries so I used raspberries and strawberries. I made a raspberry torte, too, and then served both together. My nose was a bit stuffy, but I think both dishes turned out well and the boys raved about dessert. The raspberry torte was not to sweet so I served the leftovers up for breakfast the following day.

Here's the recipe for the torte. A friend posted it on her FB page so I don't know who to give the credit to. Sorry about that. It was delicious!
Raspberry Torte

1/2 cup coconut flour
6 eggs
1/2 cup coconut oil, melted
1/2 cup honey or maple syrup
1/2 tsp salt
1/4 tsp baking soda
3/4 cup frozen raspberries


Preheat oven to 350 degrees. In a large bowl, combine flour, eggs coconut oil, honey, salt and baking soda and blend with a hand mixer. Fold in 2/3 cup of raspberries. Pour into a 9 inch cake pan. For easy removal, line with parchment paper. Bake for 30-35 minutes. To make a raspberry sauce, puree remaining raspberries with 1 tbsp water until smooth. Slice and top with fresh raspberries, raspberry sauce and cream or Ice Cream.
