GAPS Diet: Chicken and Zucchini Casserole

Here's an easy dinner and a good one for using up all the chicken you get from making broth.

2 cups diced chicken
1.5 cups shredded zucchini (remove moisture by squeezing in paper towels)
Sea salt to taste
teaspoon-sized goat cheese dollops dispersed throughout casserole
Couple tablespoons of chicken broth
1/2 cup almond flour with garlic powder, onion powder, sea salt, and a pinch of pepper

Mix the first 5 ingredients together
Spread the almond flour mixture on top
Bake at 350 degrees for about 40 minutes

Obviously, you could get really creative with this casserole and and add in all kinds of yummy things to suit your tastes!
