I Tried it and I Liked it: Almond Chocolate Freezer Fudge

I found this recipe at foodbabe.com and tucked it away for a time when we would need a little treat and am so glad I did! This is a simple recipe that can actually be pretty good for you. Eaten in moderation, of course! :)



Food Babe’s Almond Chocolate Freezer Fudge
Ingredients

1 cup almond butter
4 tablespoons of coconut oil
1 and ½ tablespoons of maple syrup
4 ounces quality dark chocolate
1/2 tsp sea salt

***Please buy all organic ingredients if possible***
Directions

Cream almond butter, coconut oil, maple syrup, and salt together in a bowl
Pour mixture into a parchment paper lined small baking dish (8×6)
Top with chopped chocolate and freeze for at least 2 hours
Remove from freezer, carefully remove fudge by lifting ends of parchment paper
Cut into 1 inch squares and store in freezer separated by parchment paper

Makes 20 servings, ~ 138 calories each so don’t get crazy and eat 10 at one time!


I made this exactly as directed - no need for improvements here!

My only note would be that this is called freezer fudge for a reason; it must stay cold! Otherwise, it melts quickly. Which actually wouldn't be too bad...I could see this being used as a chunky spread. Mmmmhmmm. So, I guess what I'm saying is don't think you'll make this up and take it to a potluck or something. Keep it at home. In your freezer. All. To. Yourself.

Hubby and Kid Rating: 4 stars. Youngest didn't care for it...although he ate his entire piece and then licked his fingers so....
