I Tried It And I Liked It: Strawberry Muffins
This morning I made Strawberry Muffins. We really enjoyed them and I'll be making these again. The batter is very simple and uses ingredients most people will already have on hand. And if you don't have strawberries you could easily substitute apples or bananas. There's not a lot of sugar in these muffins to begin with and I put a little less than called for. I also used half unbleached AP flour and half Whole Wheat. They were dense; Ben called them almost a strawberry biscuit.

Another note: the recipe says it makes 8 muffins, but mine made 11. That would make them about 170 calories each. We had two apiece for breakfast and were satisfied.
