I Tried It and I Liked It: No Cook Icing and Simple White Cake

I'm always on the lookout for good cake and icing recipes that aren't too difficult to make and don't require ingredients that I don't have on hand. Is that asking too much?

I found this No Cook Icing recipe at allrecipes.com. Very easy to make. It does call for Cream of Tartar, but that's something that's good to have on hand if you like to bake.

I made a quick cake and whipped the icing up (literally) and then added some pretty sprinkles. Viola!

A few notes about the cake: if you read the reviews, many said they added more milk. We did as well - another quarter of a cup. This is a dense cake, but with the added milk it was nice and moist and PERFECT for homemade/soft serve ice cream! So if you are looking for light and airy, this cake 'ain't it, but it's wonderful in it's own way.

A note about the icing; I added raspberry flavoring to it and it was so good! It also held up well and was still creamy and light the next day.
